
Ingredients:
2 medium-sized potatoes (aloo), peeled and diced1 medium-sized cauliflower (gobi), cut into florets1 large onion (pyaaz), finely chopped2 medium-sized tomatoes (tamatar), pureed2-3 green chilies (hari mirch), slit1 teaspoon ginger-garlic paste (adrak-lahsun ka paste)1 teaspoon cumin seeds (jeera)1 teaspoon turmeric powder (haldi)1 teaspoon red chili powder (lal mirch powder)1 teaspoon coriander powder (dhania powder)Salt to taste (namak)2 tablespoons oil (tel)Fresh coriander leaves (hara dhania) for garnishing
Instructions:
1. Preparation: Sabse pehle, aloo aur gobi ko achhe se dho lein. Potatoes ko dice kar lein aur cauliflower ko florets mein kaat lein.
2. Cooking the Base: Ek kadhai mein 2 tablespoons oil garam karein. Jab oil garam ho jaye, to ismein 1 teaspoon cumin seeds daalein. Jeera jab crackle ho jaye, to finely chopped onions daal kar golden brown hone tak bhun lein.
3. Add Spices: Ab ismein ginger-garlic paste, slit green chilies, aur turmeric powder daal kar 1-2 minute tak bhun lein.
4. Tomato Puree: Phir ismein tomato puree daal kar isse 5-7 minutes tak achhe se bhun lein, jab tak oil alag na hone lage.
5. Vegetables: Ab diced potatoes aur cauliflower florets daal kar achhe se mix karein. Ismein red chili powder, coriander powder, aur salt bhi daal kar sabko achhe se mila lein.
6. Cooking the Vegetables: Thoda paani daal kar dhak de. Sabzi ko dhimi aanch par 15-20 minutes tak pakne dein, ya jab tak aloo aur gobi dono soft ho jayein. Agar zarurat ho, to thoda aur paani daal sakte hain.
