
Introduction: Shuru karte hain ek mast South Indian recipe ke saath! Masala Dosa ek popular breakfast item hai, jo crispy dosa aur flavorful potato filling ke liye jaana jaata hai. Is recipe se aap ghar par delicious Masala Dosa bana sakte hain.
Ingredients: (Dosa Batter ke liye):
- 1 cup rice (chawal)
- 1/2 cup urad dal (urad daal)
- 1/4 tsp fenugreek seeds (methi dana)
- Salt to taste (namak, apne hisab se)
- Water (paani)
Ingredients: (Masala Filling ke liye):
- 2 medium potatoes, boiled and mashed (aloo, ubaal ke mash karo)
- 1/2 onion, finely chopped (pyaaz, bara bara kaat lo)
- 1/4 cup peas (matar)
- 1 green chili, finely chopped (hari mirch, bara bara kaat lo) – apne spice preference ke hisab se adjust karo!
- 1/2 tsp mustard seeds (sarson ka dana)
- 1/4 tsp urad dal (urad daal)
- 1/4 tsp chana dal (chana daal)
- 1 dry red chili, broken into pieces (ek sukhi lal mirch, tukdo mein tod ke)
- Thodi curry leaves (kadi patta)
- 1/2 tsp turmeric powder (haldi powder)
- Salt to taste (namak, apne hisab se)
- Oil (tel)
Instructions: (Dosa Batter ke liye):
- Rice aur urad dal ko achhe se dho lo. Inhe alag-alag kam se kam 4 ghante ya raat bhar bhigo do.
- Bhige hue rice, urad dal, aur fenugreek seeds ko saath mein grind karo, thoda paani daal kar smooth batter bana lo. Batter thoda mota hona chahiye.
- Namak daal kar batter ko 8-12 ghante tak garam jagah par ferment hone do.
Instructions: (Masala Filling ke liye):
- Ek pan mein tel garam karo. Mustard seeds daalo aur inhe splutter hone do.
- Urad dal aur chana dal daalo. Thoda sa bhuno jab tak lightly browned na ho jaaye.
- Sukhi lal mirch aur kadi patta daalo. Thodi der ke liye bhuno.
- Chopped onions aur green chilies daalo. Pyaaz jab translucent ho jaaye tab tak bhuno.
- Mashed potatoes aur matar daalo. Achhe se mix karo. Haldi powder aur namak daalo. 2-3 minutes tak pakao.
Instructions: (Dosa banane ke liye):
- Ek non-stick pan ya dosa tawa garam karo.
- Ek ladle batter ko garam tawa par daalo aur use thin, round crepe ki tarah failao.
- Dosa ke ek half par masala filling daalo.
- Dusri half ko filling ke upar fold karo.
- Har side ko 2-3 minutes tak golden brown aur crispy hone tak pakao.
- Garam garam sambar aur chutney ke saath serve karo.
Tips aur Variations:
- Agar aapko extra crispy dosa chahiye, toh batter mein thoda rice flour daal sakte ho.
- Aap masala filling mein aur bhi vegetables add kar sakte ho, jaise gajar ya beans.
- Alag-alag chutneys aur sambars ke saath experiment karo apne favorite combinations paane ke liye!
