
Arabian Mandhi Recipe
Ingredient
Rice ke liye:
– 2 cups basmati rice
– 4 cups paani
– 2 tablespoons ghee ya oil
– 1 pyaz, bareek kata hua
– 3 lahsun ke cloves, minced
– 2 teaspoons adrak ka paste
– 2-3 hari elaichi
– 4-5 lal laung
– 1-2 dalchini ke tukde
– 1 tej patta
– 1 teaspoon haldi powder
– 1 teaspoon jeera powder
– 1 teaspoon dhaniya powder
– Salt, swad anusar
Meat ke liye
– 1 kg chicken ya lamb, tukdon mein kata hua
– 2 tablespoons dahi
– 1 tablespoon nimbu ka ras
– 2 teaspoons mandhi masala (ya jeera, dhaniya aur dalchini ka powder)
– 1 teaspoon kali mirch
– Salt, swad anusar
Instructions
1. Meat ko Marinate karein
– Ek bowl mein meat, dahi, nimbu ka ras, mandhi masala, kali mirch aur salt daal kar achhe se milaayein. Kam se kam 1 ghanta marinate karein (ya behtar swad ke liye raat bhar).
2. Rice tayar karein:
– Basmati rice ko thande paani ke neeche dhokar saaf karein jab tak paani saaf na ho jaye. Isse 30 minutes ke liye paani mein bhigo dein, phir drain karein.
3. Meat ko Pakayein:
– Ek bade pateeli mein ghee ya oil ko madhyam aanch par garam karein. Ismein kata hua pyaz daal kar sunehra hone tak bhunein.
– Phir lahsun aur adrak ka paste daal kar ek minute tak bhunein.
– Marinate kiya hua meat daal kar sab taraf se bhun lein.
4. Masale daalein:
– Elaichi, laung, dalchini, tej patta, haldi, jeera, dhaniya, aur salt daal kar acche se milaayein aur 2-3 minute tak bhunein.
5. Rice aur Paani daalein:
– Ab bhiga hua aur drain kiya hua rice daal kar masalein mein acche se milaayein.
– 4 cups paani daal kar ubaal aaye, phir dhak kar 20-25 minute tak low heat par pakaayein, jab tak rice pak jaye aur paani samajh le.
6. Serve karein:
– Jab rice pak jaye, toh ek fork se halki tarah fluff karein.
– Mandhi ko garma garam serve karein, upar se fried onions, raisins aur nuts se saja kar agar chahen.
