
Ingredients:
Chole ke liye:
– 1 cup chana (chickpeas), raat bhar bhigo ke rakhein
– 1 pyaz, bareek kata hua
– 2 tamatar, puree kiye hue
– 2 hare mirch, slit kiye hue
– 1 inch adrak, grated
– 4-5 lasun ke cloves, minced
– 1 tsp jeera
– 1 tsp rai
– 1-2 bay leaves (tej patta)
– 1 tsp garam masala
– 1 tsp lal mirch powder
– 1 tsp dhania powder
– Salt, swad anusar
– 2 tbsp tel
– Hara dhaniya, garnish ke liye
Bhature ke liye:
– 2 cups maida (all-purpose flour)
– 1 tbsp suji (semolina)
– 1/2 cup dahi (yogurt)
– 1 tsp baking powder
– Salt, swad anusar
– Paani, zaroorat anusar
– Tel, deep frying ke liye
Instructions:
1. Chole banane ki taiyari:
– Bhige hue chane ko pressure cooker mein paani ke sath 3-4 seeti tak pakaye, fir drain kar lein.
– Ek pan mein tel garam karein, usmein jeera, rai, aur bay leaves daalein.
– Jab beej chhatakne lage, tab chopped pyaz daal kar sunehra hone tak bhune.
– Ab adrak, lasun aur hare mirch daal kar ek minute tak bhune.
– Tamatar ki puree, lal mirch powder, dhania powder, aur salt daal kar achhe se milaye. Tel alag hone tak pakne dein.
– Pakaye hue chane daal kar achhi tarah mix karein. Consistency ke liye paani daalein.
– 15-20 minutes tak dhimi aanch par pakne dein, phir garam masala daal kar hara dhaniya se garnish karein.
2. Bhature banane ki taiyari:
– Ek mixing bowl mein maida, suji, dahi, baking powder, aur salt milayein. Acche se mix karein.
– Isse ek naram dough mein gundhein, zaroorat anusar paani mila kar. Dhak kar 2 ghante tak rest karein.
– Rest karne ke baad, dobara gundhein aur barabar ke balls mein baat lein.
– Har ball ko 6 inches diameter tak bel lein.
– Ek deep pan mein tel garam karein. Jab garam ho jaye, tab rolled-out dough ko fry karein jab tak wo fluffy aur golden na ho jaye.
– Paper towel par drain karein.

3. Serving:
– Garam garam chole ko bhature ke sath serve karein, saath mein sliced onions, green chutney, aur achaar ke sath.
