Sambhar Ke Liye:
- 1 cup toor dal (split pigeon peas)
- 1 medium onion, chopped
- 1 medium tomato, chopped
- 1 cup mixed sabzi (gajar, beans, aloo)
- 2-3 green chilies, slit
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1-2 tbsp sambhar powder (swad anusar)
- Namak swad anusar
- Curry leaves ki ek handfull
- 2 tbsp oil (preferably ghee ya vegetable oil)
- Garnish ke liye fresh coriander leaves
- Pani (zarurat ke hisab se)
Instructions
Step 1: Idli Batter Tayyar Karein
- Idli rice aur urad dal ko alag alag pani me dhoke 6-8 ghante ya raat bhar bhigo kar rakhein.
- Pani ko drain karke urad dal ko thoda pani dal kar smooth batter bana lein. Isse ek bade bowl me daal dein.
- Bhige hue rice ko coarsely grind karein. Isse urad dal ke batter ke saath mix karein.
- Namak daal kar achi tarah mix karein. Cover karke isse warm jagah par 8-12 ghante ke liye ferment hone dein.
Step 2: Sambhar Tayyar Karein
- Toor dal ko dhoke pressure cooker me 3 cups pani ke sath 3-4 whistles tak pakne dein jab tak yeh soft na ho jaye.
- Ek pan me oil garam karein aur mustard seeds daal kar splutter hone tak pakne dein, phir cumin seeds aur curry leaves daal dein.
- Piyaz ko translucent hone tak sauté karein, phir chopped tomatoes, green chilies, aur mixed sabzi daal kar pakayein jab tak sabziyan naram ho jayein.
- Paka hua toor dal, turmeric powder, sambhar powder, aur namak daal kar achi tarah mix karein aur 10-15 minute tak simmer karein, zarurat anusar pani dalte rahein.
- Seasoning adjust karein aur chopped coriander leaves se garnish karein.
Step 3: Idlis Steam Karein
- Idli molds ko grease karein aur har cavity ko fermented batter se bharein.
- Idli steamer me 10-15 minute tak steam karein ya jab tak toothpick clean bahar na aaye tab tak.
- Idlis ko molds se nikaal kar garam rakhein.
Serving
